More than seven months after shuttering of all of its locations, Taps Fish House and Brewery rises from the ashes, returning to life at John Wayne Airport. The resurrected brewery and restaurant officially opened Tuesday, Feb. 13 inside Terminal C.
“We are thrilled to welcome Taps Fish House and Brewery to the Thomas F. Riley Terminal,” said Charlene Reynolds, airport director, in an emailed statement. “This addition enhances our dining options and brings back a beloved local concept to our travelers.”
The 35-year-old company, whose original owners had planned on opening inside the airport before announcing its sudden closure due to financial woes, was purchased by restaurant operator and airport concessionaire Mission Yogurt, Inc., the outfit behind Greenleaf Kitchen and Cocktails and dozens of other food concepts at Denver International Airport and San Diego International Airport.
“We are proud to once again make Taps available to its many fans,” said Rod Tafoya, president and founder of Mission Yogurt, Inc., in an emailed statement. Tafoya started his airport eatery empire after purchasing a Penguin’s Frozen Yogurt franchise in Arvada, Colorado, in the late 1980s. He added, “The concept has been a favorite of Southern California diners since it was founded 25 years ago, and we’re looking forward to continuing that legacy for years to come.”
The new pared-down Taps offers breakfast, lunch and dinner fare, including Misoyaki Chilean sea bass, Brewer’s fish and chips (a Taps menu staple) and a sushi bar. Soups, salads, sandwiches, burgers and entrees are also available, as well as grab-and-go options. The beverage menu will boast suds from Anaheim’s Brewheim Beer Makers, cocktails and California wines.
A far cry from the company’s original 10,000-square-foot casual dining venue in Brea, John Wayne Airport’s Taps features an semi-enclosed dining area with a view of the tarmac and a u-shaped bar with seating.
