The husband-wife duo behind Heritage Barbecue, regarded as one of Southern California’s best restaurants, will open Les Brisket Hut, a taco and wine concept, this summer in Santa Ana.
Located in the city’s French Park neighborhood, the new eatery from Brenda and Daniel Castillo will feature Heritage Barbecue’s smoked brisket and beef tallow tortillas. Their menu’s build-your-own options will also offer a selection of meats smoked at the San Juan Capistrano culinary institution, including barbacoa, pulled pork, house-cured bacon, Texas hotlink, chorizo and more.
“Danny was born in Santa Ana and I was raised in Santa Ana, so this is a coming full circle moment for us,” said co-owner Brenda Castillo in a press release.

Les Brisket Hut, measuring approximately 1,500 square feet, will be part of the new Santa Ana Diesel development that’s made up of a pair of 75-year-old corrugated steel Quonset huts converted into retail and dining space. The Castillo’s new casual-dining concept will join 61 Hundred Bread (Karlo Evaristo’s first brick-and-mortar space for his popular bakery) and a handful of other retail stores inside the complex.
“We saw this space and fell in love with it,” said pitmaster and co-owner Daniel Castillo in a written statement. “This particular block here in Santa Ana is really special and we’re excited to be here and hope to bring something familiar but different, with our own twist on it, to folks here.”
Although the menu will lean heavily on tacos, diners can also look forward to Heritage Barbecue fan favorites like smoked brisket banh mi to make occasional cameo appearances. California and Texas wines, fittingly enough, as well as a pared-down selection of craft beers, will fill out the beverage program.
