Now that the beef is over, and anyone can use the Taco Tuesday moniker without fear of legal rigamarole, new and inventive tacos pop-ups and parties are on the rise. Campesino Cafe at the Ecology Center, for example, will usher in an inaugural Taco Tuesdays on Feb. 13.
Tie-Dye Taqueria, as it’s called, will take place every Tuesday inside the regenerative farm in San Juan Capistrano. Led by chef Irving Zarate and the center’s culinary team, guests can enjoy tacos from 4 until 7 p.m. from the farm’s Campesino Cafe, which opened in June of 2023.
Each week the pop-up will feature tacos using tortillas from the farm’s crop of blue corn, with Zarate preparing versions with local fish or vegetables. The kick-off menu will be a cabbage salsa macha taco with roasted cabbage, cauliflower, onions, and salsa macha; a fish taco fille with cabbage, escabeche, crema, and salsa verde; and a kids quesadilla for wee ones with delicate palates.
Guests are also invited to don their finest tie-dye garb to mark the occasion. This isn’t the first time the Ecology Center tipped its hat to hippie-era vibes; on Saturday, Feb. 24, it will host its first-ever Dead head event, christened Day of the Dead, featuring bands covering music from the Grateful Dead, beverages from Los Molinos, Laguna Brewing and Boochcraft, and food from local vendors.
