One of Orange County’s most beloved butcher shops, Electric City Butcher, will close its Santa Ana location on Saturday, Feb. 25 and become an online-only store.
The decision came after almost a decade as one of Orange County’s first butcher shops of its kind founded by Steve Sabicer and Michael Puglisi with partner Richard Lu.
“When we opened, we were the only shop [like this] within a 50-mile radius,” co-owner Steve Sabicer said.
When the COVID-19 pandemic hit, and at one point all stores and restaurants were closed, the business was forced to be entirely online for delivery, butchery classes were suspended and customers could no longer step inside to experience their butcher selecting the perfect product for them.
“That transition changed a lot,” Sabicer said. “I think we just made a decision to move all of the ECB brand — the understanding of our quality, our approach, our sourcing, and move that online where we think it will serve a much larger community in Southern California.”
The online store, which can be found through the ECB website, already has 14 products that are available for delivery, with more products being added to the storefront. Popular store favorites like the Chicken Liver Mousse, ECB Chili are available as well as new items like the Bacon-Cheddar Burger Patties.
In an email to the shop’s community of patrons, the trio wrote “Our goal has always been to provide our community with the highest quality, greatest transparency, and most responsibly raised products available…we can say with confidence, BOX CHECKED.”
When speaking about their patrons, Sabicer and Puglisi refer to them as guests. They aren’t just customers, they’re part of a community being invited into their “home.”
